No knife without steel

Steel is a material in which iron is the predominant element by mass, the carbon content is generally less than 2%, and it contains other elements. "Generally" means that there are exceptions. Steel can be hardened with a carbon content of 0.22% or higher. The individual elements have a significant influence on the properties of the steel. The register of European steels now lists well over 2,400 different types of steel; we have summarized the compositions of the steels typically used for knife blades in this table.
