Honing
After the blade has undergone several grinding processes, the final step is honing, which gives the knife its final sharpness. Very fine abrasives are used to remove and straighten the smallest irregularities and the burr on the cutting edge created during grinding. Only a correctly honed knife can develop its full cutting performance. In addition to professional methods for honing, there are various tools for the experienced user at home to give pocket knives, chef's knives or razors the finishing touch. Honing belts have a leather carrier surface to which special abrasive pastes are applied for fine honing. Alternatively, fine-grained water stones or oil stones ensure an extremely smooth and closed edge. Knives should be sharpened and honed regularly if used frequently.
