Edge Retention
Edge retention describes the resistance of a blades edge against being dulled by chemical, mechanical and thermal influences. It expresses how long the blade remains sharp under certain circumstances and over a certain period of time. This property is determined by the blade material, the production process employed to make the blade and its edge geometry. Another major factor is the behavior of the user, which has a significant influence on a blade\'s edge retention. If the knife is used incorrectly or not for its intended purpose, the edge will wear out quickly and might even be destroyed.
